Cava Brut Pares Balta

Cava is a sparkling wine typical of Catalonia. It is produced between Barcelona and Girona by azienda Pares Balta. It is of biodynamic production on a ridge at an altitude of 350 metres, which enjoys fresh sea breezes and a continental climate. The female producer is young and dynamic, along with oenologist Marta, determined to present the best aspects of the minerality of the area, which has always been dedicated to this kind of wine. Just like Champagne, this wine is produced via a second fermentation in the bottle with indigenous yeasts for 12 months. It is subsequently disgorged and ‘dosaged’, so as to make it not too dry to the taste, but pleasantly captivating like a Brut. Quattro Leoni is the only wine bar in Florence where this wine is available, our customers finding it very satisfying. The wine is perfect as an aperitivo but is also an excellent bubbly accompaniment to any meal.
